Uncle Bear’s Brewhouse Grill set to Open at Ahwatukee Foothills Towne Center
Strategic Retail is pleased to announce that Uncle Bear’s Brewhouse Grill opened at Ahwatukee Foothills Towne Center on Thursday, September 26th, 2013. This will be Uncle Bear’s fifth Valley bar and grill, but this location will have a different feel than the other Uncle Bear’s Bar and Grill’s located in Chandler, Mesa, Queen Creek and Surprise.
The 8,000 square foot location at Ahwatukee Foothills Towne Center presented a unique challenge for the Strategic leasing team and potential restaurateurs. The old restaurant format & size of this space put pressure not only on rent, but on potential layouts of the space while still creating an intimate feel necessary to today’s consumer.
Todd Carey, Josh Allison, and David Thompson were looking to get into the Ahwatukee market and considering another location but liked the property located at 48th Street & Ray Road and had the same concerns regarding the size of the space. The 8,000 square foot former El Paso Bar-B-Que Co. was twice the size of their other restaurant locations. The Uncle Bear’s team took a little inspiration from a variety of restaurants in the San Diego area and sat down with their design team to come up with a new concept. This concept would put a state of the art display brewery inside of their traditional bar and grill.
The Uncle Bears brewery will target the craft beer consumer, a population that continues to grow. They will have 14 beers on tap with up to nine or ten of their own beers that are brewed on site. Todd, Josh, and David looked to Scott Bickert, head brewer, to design their craft brews. Scott has previously worked with local brewery Four Peaks Brewing Company, and Colorado’s Durango Brewing, and Ska Brewing Company. The team has also called upon Josh Frank, previously of Pale Horse Brewing in Salem, Oregon as an assistant brewer. Opening Day at Uncle Bear’s Brewhouse Grill will feature the “Dog Paddle Wheat” and “Head to Tail Amber Ale”, and potentially “Dog Park Dark”. The remainder of the taps will be rotating guest craft beers.
The food menu at Uncle Bear’s Brewhouse Grill is also getting an upgrade at the Ahwatukee location. Todd, Josh and David have tasked Craig Driml, a celebrity private chef to the likes of Johnny Carson and Steven Seagal, with the creating of a food menu that takes the typical bar food up a notch.
